Weekender: More Pop-Tarts

Ever since trying the homemade version, I've had pop-tarts on the brain. This week for lunch I made a savory little number with sweet potato, red pepper, onion, and goat cheese.

This morning we made a sweet version. Just spoon on a little lemon curd

and blueberry jam.

bake, and wake up your taste buds!

A good combination for summer would be vanilla pastry cream and fresh berries. Mmmm.

Okay, I bought all the ingredients for savory pie with red pepper, yam, goat cheese, onion. Now here's my question for the savory pie. Do I sautee the onion, pepper and yam together? Or do I bake the yam separately? It looks soooo yummy.

Dice everything (except the cheese, of course). Put the onion and red pepper in together and saute that in a little butter or olive oil for about 10 minutes, add the diced yam and cook for about another 10 min. Season it with salt & pepper to your taste. Put the filling on your rolled out rectangle of dough, top with a little cheese and fold it up and seal it. Poke a couple of holes in the top to steam can escape. Brush a lightly scrambled egg or a little cream on the top to help the dough brown up nicely. I noticed that these little savory pies took a little longer to cook, just keep an eye on them and when they look golden and flaky, they are done.

We made the lemon curd and blueberry jam pop tarts! Soooooo yummy. I even gave one, still warm to Ms. Diane, Jupiter's kindergarten guru.
